Spicy Prawns with Sesame, Cucumber and Carrot Salad
Ribbons of fresh and pickled vegetables in a miso dressing with spicy crunchy prawns and sesame seeds.

Ingredients:
- 1kg julienned carrot
- 1kg julienned cucumber
- 200g chopped spring onion
- 1kg daikon, julienned, pickled and drained
- 100g white miso paste
- 30ml mirin
- 60ml rice wine vinegar
- 100ml peanut oil
- 30ml sesame oil
- 2kg frozen I&J Double Crunch Spicy Prawns
- 60g black and white sesame seeds
Instructions:
1. Combine carrot, cucumber, spring onion and daikon in a bowl.
2. Add miso paste, mirin and rice wine vinegar into a blender. Combine well and slowly add peanut and sesame oil to emulsify.
3. Cook frozen I&J Prawns following packet directions.
4. Dress the salad. Served topped with prawns and garnish with sesame seeds.
